Ingredients: 3 tbsp. of olive oil, 1 medium sized onion, I/4 lb. of string-beans, 2 medium sized potatoes, 1 red bell-pepper, a small bunch of spinach, a pinch of panch-phoron ( Indian spice found in the ethnic store) 1 tsp. of pepper-flakes and salt according to taste.
Method: Cut the onion and keep aside. Next jullian the potatoes, string beans, bell-pepper but leave the spinach-leaves whole. In a skillet pour the olive-oil and onion and fry for a while. Then add the vegetables and salt; cover for a while over low flame and let it simmer. When done, sprinkle the pepper-flakes and panch-phoron until you can smell the aroma of the spices. Serve with Roti (Tortilla).
Chana-Ka Halwa (my recipe)
Ingredients: Chana or split dal (bran) 1 lb. Milk 1/2 gallon, sugar 1 cup, ghee (Clarified butter) 1/2 cup, Raisins a palmful, slithered almonds a palmful, cinnamon 1 stick, 4/5 cardemoms, cloves and a couple of bay-leaves
Method: Soak the Chana-ka-dal or split-bran in water over-night. Drain the water and boil the chana in milk till the mixture dries up. Next grind it in a food-processor. In a pot, put the ghee along with 5 cardemoms, 1 stick of cinnamon, raisins, few cloves and bay-leaves and fry for a while. Then, put the ground chana and fry making sure the mixture doesn't stick to the pot, now put sugar and keep on frying until you see the color change to a brownish hue. When done, spread it on a platter and let it cool then sprinkle the almonds on top. Refridgerate for a while before serving.
Broiled Tomato Bharta
Ingredients: Two big ripe tomatoes, 1 medium sized onion, a sprig of Cilantro, red-pepper flakes 1/2 tsp., salt according to taste
Method: Broil the tomatoes and peel the skin, then mash it with a fork. Cut the onion into small chunks and add red-pepper flakes and Cilantro. Mix them all together with the salt. Its yummy when taken with rice.
